This simple salad takes the authentic Italian Caprese Salad and makes it easy to serve instead of your regular dinner salad and includes lettuce that the traditional Caprese salad does not, so it's more filling and less expensive since you use less of the expensive cheese. You can even layer this salad in a mason jar to make it portable for work of school and enjoy the fresh taste wherever you are. Heres a great
instructional on how to layer salads in a mason jar so you don't end up with soggy lettuce.
To make a Caprese Salad bowl you'll need1 head romaine lettuce washed and pulled into bite size pieces
1/2 cup FRESH mozzarella cheese
Heirloom tomatoes ( we used a cup of cherry heirloom tomatoes , and sliced them in half)
8 large fresh basil leaves sliced into strips
Gremolata Olive oil 1/8 cup ( you can use plain olive oil but the Gremolata gives it a fabulous flavor ,
we buy ours here)
1/4 cup Aged Balsamic Vinegar
1 tablespoon salt
1/2 teaspoon pepper
1/2 teaspoon Italian seasoning
Mix Vinegar, oil and seasonings in a bowl and let sit for 1/2 hour to infuse flavors
Clean and chop basil, lettuce and tomatoes
Slice mozzarella and place in bowl
Pour dressing mixture on top and toss
I like to eat this with a piece of crusty Italian bread , toasted Pita Chips crumbled on top or even pita bread. You will definitely want something to soak up the delicious dressing after the salad is gone!
