Caprese Salad Bowl

Caprese Salad Bowl

Ciao Beautiful Readers!

This simple salad takes the authentic Italian Caprese Salad and makes it easy to serve instead of your regular dinner salad and includes lettuce that the traditional Caprese salad does not, so it's more filling and less expensive since you use less of the expensive cheese.  You can even layer this salad in a mason jar to make it portable for work of school and enjoy the fresh taste wherever you are.  Heres a great instructional on how to layer salads in a mason jar so you don't end up with soggy lettuce.

To make a Caprese Salad bowl you'll need

1 head romaine lettuce washed and pulled into bite size pieces
1/2 cup FRESH mozzarella cheese
Heirloom tomatoes ( we used a cup of cherry heirloom tomatoes , and sliced them in half)
8 large fresh basil leaves sliced into strips
Gremolata Olive oil 1/8 cup ( you can use plain olive oil but the Gremolata gives it a fabulous flavor , we buy ours here)
1/4 cup Aged Balsamic Vinegar
1 tablespoon salt
1/2 teaspoon pepper
1/2 teaspoon Italian seasoning

Mix Vinegar, oil and seasonings in a bowl and let sit for 1/2 hour to infuse flavors
Clean and chop basil, lettuce and tomatoes
Slice mozzarella and place in bowl
Pour dressing mixture on top and toss

I like to eat this with a piece of crusty Italian bread , toasted Pita Chips crumbled on top or even pita bread.  You will definitely want something to soak up the delicious dressing after the salad is gone!

Enjoy Y'all!

Asian Cucumber Salad

Easy Asian Cucumber Salad with Furikake

Asian Cucumber Salad is light and easy salad to throw together whenever you are eating Chinese, Japanese, Korean..pretty much any asian meal.  You can throw it together in under 10 minutes and is ready to serve in an hour .

My kids really love cucumbers so this is always a hiit in our house.  We love the Furikake seasoning , those "sprinkles" you see on the salad.  It's a Japanese seasoning blend made up of salt, sushi nori (seaweed), sesame seeds, dried tuna flakes, ground shiso leaf, salmon flakes, powdered soy sauce or miso, and dried egg.  It sounds a little weird but try a few sprinkles and you'll be hooked!  If my kids will sprinkle it on their tongues directly from the shaker , which they do, I guarantee you'll find it as "normal" as apple pie.

Asian Cucumber Salad Recipe

6 Persian Cucumbers or one long English Cucumber very thinly sliced
1/2 cup seasoned white rice wine vinegar
1/4 cup sesame seed oil
1 tablespoon white sugar
Furikake Seasoning

After you've cleaned and sliced up your cucumbers Mix the sugar and vinegar until sugar dissolves.
Add your sesame oil stir and pour over cucumbers
Sprinkle generously with Furikake seasoning
Refrigerate for an hour and sprinkle even more Furikake on top when ready to serve

And then sprinkle that Furikake right on your tongue , 'cause you'll want to - that good , seriously!

Enjoy Y'all !
